Swet Potatoes With Rum

This is a flambe recipe. Treat it accordingly. I used to have an article up about how to flambe but the articles have disappeared. The rum and sugar enhance the sweet flavors of the potatoes elegantly and stylishly
Ingredients:
6 sweet potatoes, peeled and cut crosswise into 1/2 thick slices
1/4 c butter + 2 tbsp
1/2 c sugar
1/2 c jamaican rum
Directions:
1. Saute the potatoes in 1/4 c butter, turning often to prevent sticking.
2. When the potatoes are light brown and tender, transfer to a chafing dish that has the 2 Tbsp butter already melted.
3. Sprinkle the sugar over teh potatoes and stir lightly.
4. Add the rum, tip the dish, ignite.
5. Baste the potatoes in the syrup.
6. Serve immediately (duh, you're doing flambe at the table, right?)
