There are a lot of textures, colors, and flavors goin' on in this stir-fry. It could be garnished with crumbled bacon, for those who'd like to add meat to the dish... Cooking this stir-fry only takes a few minutes, it's the preparation and cutting of all the veggies that can take a little longer :) Ingredients:
1/2 red bell pepper, chopped |
1/2 sweet onion, chopped |
1 carrot, grated or thinly sliced |
1/2 cup cauliflower, broken into small pieces |
1 large rib celery, sliced diagonally |
1 medium zucchini, sliced |
2 tablespoons cider vinegar |
2 tablespoons sugar |
soy sauce to taste |
Directions:
1. Stir-fry all veggies in olive oil 5 to 7 minutes, until crisp-tender. 2. Mix vinegar and sugar, add to skillet; stir well. Add soy sauce to taste. |
