Sweethearts Butterscotch Pots De Cremes |

Quick,easy variation on classic French dessert.Pots de cremes have intense flavor,so a small serving is perfect.Serve in small ramekins, pots de creme cups, demitasse cups. Chocolate chips may be substitued. Wonderful for a special romantic dinner. Ingredients:
3/4 cup butterscotch chips |
2 tablespoons sweetened condensed milk |
1/2 teaspoon pure vanilla extract |
2 teaspoons dark rum, (optional) |
3/4 cup heavy whipping cream |
*may sustitute chocolate chips |
Directions:
1. Place butterscotch chips and sweetened condensed milk in top of double boiler 2. Cook over low heat until chips melt, stirring frequently 3. Add vanilla and rum, stir until blended and very smooth 4. Remove from heat, cool to lukewarm 5. In medium sized bowl, whip cream until soft peaks form 6. Stir about 1/3 cup of the whipped cream into the cooled butterscotch mixture 7. Mixture will lighten 8. Then fold remaining whipped cream into the mixture 9. Divide this between your choice of 6 serving cups 10. Place in the freezer at least an hour 11. When serving you may add shaved bittersweet chocolate 12. Serve cold 13. This calls for a cup of strong coffee :) |
