An easy cake i got off the net about 10 years ago. I make it in a greased pyrex casserole dish lid.
Ingredients:
1 egg
1 pinch salt
4 ounces margarine
4 ounces sugar
8 ounces self raising flour
milk
Directions:
1. Rub the fat into the flour.
2. Add sugar, salt and mix with beaten egg to a dough you can handle.
3. Cut into 2 halves and roll out.
4. Put 1 half on a plate and fill with jam or lemon curd.
5. Wet the edges and put the other half on top.
6. Trim and bake in a hot oven until golden brown.
