The most yummy corn dish you can add a little extra sugar if you wish but I find it unnecessary as the baby corn or sweetcorn has enough sugar Ingredients:
8 young corn on the cob (sweetcorn) |
10 baby onions |
4 rashers smoked back bacon, cubed |
3gem lettuce |
50g butter |
olive oil |
salt and pepper |
Directions:
1. Peel the onions 2. place them in a pot of cold water and bring to the boil 3. reduce the heat and simmer for 10min 4. once cooked remove and halve the onions,lengthwise, remove roots at this point 5. meanwhile cut the corn from the cob 6. and boil gently for 5-8 min with out any salt (salt hardens the corn) 7. fry the bacon in a little olive oil till crisp 8. finely slice the gem lettuce 9. once the corn is cooked drain and place in a large bowl 10. add about 1/4 cup of the corn water back to the corn 11. add the onions and butter 12. stir 13. stir in bacon 14. only add the lettuce when ready to serve 15. season with salt and pepper |
