Treasured family recipe. Been eating this as long as I can remember. Really easy recipe, longest part is shredding the zucchini! Ingredients:
3 eggs |
1 cup oil |
1 1/2 cups sugar |
2 cups zucchini, shredded |
1 teaspoon vanilla |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon salt |
3 teaspoons cinnamon |
2 1/2 cups flour |
1/2 cup chocolate chips |
1/2 cup nuts, chopped |
1/2 cup shredded coconut |
Directions:
1. Combine eggs, oil, sugar and zucchini. 2. Mix in dry ingredients. 3. Stir in chocolate chips, nuts and coconut. 4. Bake at 350 degrees for about 1 hour. |
