Simple and flavorful, and beautiful to present to guests after a meal. Easy to make the day before... Sweet treat! Enjoy! :) Ingredients:
whites of 2 large eggs |
1/3 cup powdered sugar |
8 oz block mascarpone cheese, softened |
1 cup full milk yogurt |
1/2 lb raspberries |
1/2 lb broken “italian crunchy almond cookies” (available in deli stores) |
Directions:
1. Line 2 lb loaf tin with baking parchment. 2. Whisk egg whites until stiff and gradually add sifted powdered sugar whilst whisking all the time 3. Gently fold in the yogurt , softened cheese , quickly add the raspberries and broken cookies. 4. Pour into the loaf tin and **freeze overnight.** Place plastic wrap on top. 5. To serve, remove from freezer, put in fridge for 10 minutes. 6. Turn out, slice and garnish with fresh raspberries or a fruit coulis and serve with a cookie. |
