The honey sweetness of this specialty from Marrakesh is enchanting. Serve as a dip with bread, or better, pour hot over chicken and sprinkle with toasted almonds. Arabesque. Ingredients:
1 tbsp extra virgin olive oil |
28 oz diced tomatoes, with liquid |
1 pinch of salt |
1 tbsp sugar |
1/2 tsp ground cinnamon |
1/2 tsp black pepper |
1 tbsp honey |
Directions:
1. Heat the oil in a pan and add the tomatoes, a pinch of salt, and the sugar. 2. Cook for 45 minutes over low heat until the liquid is gone and the puree is thick and jammy and almost caramelized. It is vital to stir often so that it doesn't stick to the pan and burn. 3. Add the cinnamon, pepper, and honey and a little salt to taste., and stir well. Cook for a minute or so more. |
