This is amazing and the crust is so easy to make Ingredients:
6 ounces cream cheese, softened |
1 cup unsalted butter |
2 1/2 cups all-purpose flour |
1 cup unsalted butter |
2 cups sugar |
8 large egg yolks |
3/4 cup strong brewed tea |
1 teaspoon lemon zest |
1 tablespoon lemon juice |
2 tablespoons flour |
1 1/2 cups cornmeal |
Directions:
1. to make the crust, wih an electric mixer, beat the cream cheese, 2 sticks butter until well combined. 2. add the flour and mix until dough forms a ball. 3. pat dough into 9 inch pie pan. 4. chill until ready to use. 5. to make the filling, with an electric mixer, beat 2 sticks butter and sugar at low speed until light. 6. add the yolks one at a time beating at low speed until well incorporated. 7. slolwy add the tea, lemon zest and lemon juice scrape down sides of bowl with a rubber spatula. 8. add 2 tablespoons flour, salt and cornmeal and mix well. 9. bake at 350 for 45 minutes. 10. cool on wire rack before serving. |
