A really easy pudding. Slow cook, stove top or pressure cook your yams or sweet potatoes and then bake in a casserole. It takes me alittle over 10 minutes to pressure cook them! Slow cook just another easy but longer method! Read more ! Ingredients:
6 large yams or sweet potaotes |
1/4 cup butter |
1/4 cup brown sugar |
2 teaspoons lemon peel -- grated |
1 tablespoon lemon juice |
1/2 teaspoon salt |
1/3 cup brown sugar |
1/2 cup slivered almonds |
Directions:
1. Wash yams; drain but do not dry. 2. Set in slow-cooking pot. 3. Or cook by your favorite method: pressure cooker, stove top etc. 4. Cover and slow cook on low for 4 to 6 hours (depending on size 5. and shape). 6. Cool, peel and place in large bowl. 7. Mash until smooth. 8. Add butter, 1/4 cup brown sugar, lemon peel, juice and salt; mix well. 9. Spoon into greased 1 1/2- qt. baking dish. 10. Sprinkle remaining 1/8 cup brown sugar and almonds on top. 11. Bake in 350 F oven for 40 to 50 minutes |
