A sweet mix of apples, squash and carrots that I threw together one day. Ingredients:
1 acorn squash (can use butternut, buttercup, carnival etc. use a small or med one) |
2 large carrots (grated) |
4 tablespoons butter |
1 large apple (cubed) |
2 tablespoons brown sugar |
1 teaspoon vanilla |
raisins (optional) |
candied nuts (optional) |
Directions:
1. Preset over to 350 degrees. Half squash and scoop out seeds. Set face down in a baking dish with 1 inch of water. Bake for 45-50 minutes. Remove squash from oven, peel off the skin, and cut into cubes. Simmer carrots in butter on med-low for 8 minutes. Add squash cubes and simmer for 3-4 minutes. Add apple cubes, raisins, brown sugar, vanilla and nuts and simmer for 2-3 minutes more. Enjoy! |
