Sweet & Spicy Watercress Tofu

The spiciness of the watercress and the texture of the tofu are well off set by the sweetness and the walnuts.
Ingredients:
500 g watercress
330 g firm tofu (mashed)
1 medium onion (chopped)
5 garlic cloves (minced)
1 piece gingerroot (minced)
2 tablespoons honey
100 g walnuts
2 tablespoons sesame
1/2 teaspoon red chili pepper flakes
salt
pepper
sesame oil, to fry
Directions:
1. Fry onions, garlic and ginger.
2. Add sesame and walnuts and red chili.
3. Place washed whole watercress; let steam.
4. When wilted add the tofu.
5. Season with salt and pepper.
6. Just before removing from heat add honey (to make this recipe vegan, use honey substitute).
