Sweet & Spicy Roasted Sweet Potatoes |

I found this recipe in Woman's Day. Ingredients:
1/4 cup brown sugar, firmly packed |
2 tablespoons olive oil |
1/2 teaspoon ground cinnamon |
1 pinch cayenne pepper |
1 teaspoon salt |
1/2 teaspoon pepper |
4 lbs small sweet potatoes, cut into 3/4-inch thick wedges (about 10) |
1/2 cup grated parmesan cheese (2 oz) |
Directions:
1. Heat oven to 375 degrees F. In a large bowl, combine the sugar, oil, cinnamon, cayenne 1 tsp salt and 1/2 tsp pepper. 2. Add the sweet potatoes, sprinkle with 1/4 C Parmesan and toss to coat. Divide the potatoes between 2 large rimmed baking sheets and arrange in an even layer. Sprinkle with the remaining 1/4 C Parmesan and roast, rotating the pans halfway through cooking until deep golden brown and tender 50 to 60 minutes. |
