Sweet-sour Yams And Pineapple Casserole |

A new twist to yams. Ingredients:
1 20 oz. can sliced pineapple |
1 tbsp. cornstarch |
1/4 tsp. salt |
3 tbsps. vinegar |
2 16 oz. cans yams, drained |
4 green onions |
1/2 c. diagonally sliced celery |
1/2 c. green pepper chunks |
1 tbsp. oil |
Directions:
1. Drain the pineapple and reserve the syrup. 2. Combine with cornstarch and salt in a sauce pan and ciik, stirring until sauce boils and thickens. 3. Stir in vinegar. 4. Add the yams and pineapple slices and pour into a casserole. 5. Cover. 6. Bake at 350 degrees for about 25 minutes. 7. Cook the onions, celery, and green pepper in oil in a sauce pan for about 4 minutes. 8. Stir into yam mixture and serve at once. 9. Serves 8. |
