This recipe is from Better Homes and Gardens, New Dieter's cookbook.The recipe is only 204 calories. Ingredients:
1 1/4 cups peaches or 1 1/4 cups apricot fruit spread |
2 tablespoons cider vinegar |
1 tablespoon reduced-soduim soy sauce |
1/8 teaspoon ground ginger |
6 cups torn mixed greens |
6 ounces boneless cooked turkey breast, cup into thin bite-size strips (about 11/4 cups) |
1 (11 ounce) can mandarin oranges, section drained or 2 medium oranges, sectioned |
1 cup broccoli floret |
1 cup cauliflower floret |
Directions:
1. For dressing, in a small saucepan stir together spreadable fruit, vinegar, soy sauce, and ginger.n Cook and stir over low heat until bubbly. Remove from heat. Set aside to cool slightly. 2. In a large mixing bowl toss together greens, turkey breast, orange sections, brocolli, and cauliflower. Divide salad among 4 plates. Drizzle with dressing. |
