When you buy pork shoulder on sale, you can make this popular main dish for only $1.99 a serving compared with $3.95 or higher at a Chinese restaurant. Serve it over rice. Ingredients:
1/4 cup frozen apple juice concentrate, thawed |
1 teaspoon grated fresh ginger |
1 teaspoon minced garlic |
1 pound pork shoulder, trimmed of fat and cut into 1 cubes |
1 cup pearl onions, thawed from frozen |
1 sweet red pepper, diced |
1 green pepper, diced |
1 tablespoon cornstarch |
2 tablespoons reduced-sodium soy sauce |
1 tablespoon cider vinegar |
8 ounces (1 can) unsweetened pineapple chunks (with juice) |
1 tablespoon packed brown sugar |
Directions:
1. In a shallow nonmetal dish, combine the apple juice concentrate, ginger, and garlic. Mix well. Add the pork and stir to coat. Cover and refrigerate for 30 minutes, stirring frequently. 2. Coat a 10 no-stick skillet with no-stick spray and place over medium-high heat until hot. Add the onions, red peppers, and green peppers. Cook, stirring, for 3 minutes, or until crisp-tender. 3. Add the pork and marinade. Cook, stirring, for 5 minutes, or until the pork is no longer pink in the center. Check by inserting the tip of a sharp knife into 1 cube. 4. Place the cornstarch in a medium bowl. Add the soy sauce and vinegar. Stir until smooth. Stir in the pineapple (with juice) and brown sugar. Add to the skillet. Bring to a boil. Cook, stirring frequently, for 3 minutes, or until the sauce thickens. |
