Sweet/sour Marinated Grape Tomatoes |

While this is not a new flavor combination or particularly creative recipe, it has always been one of my favorites for accompanying creamy casseroles like my Baked Swiss Chicken Salad post. I like the marinade/dressing to be on the sweet side, but if you don't, that's an easy fix! Read more ! Ingredients:
2 cups grape tomatoes, halved |
3 tblsps canola oil |
3 tblsps cider vinegar |
2 tblsps white sugar |
1/2 tsp each dried basil, oregano, and parsley flakes |
freshly ground pepper & salt to taste |
iceberg lettuce |
Directions:
1. Mix the oil, vinegar, sugar, and herbs in a small bowl. Season with salt & pepper, 2. Pour over the halved grape tomatoes, stir gently to completely coat and refrigerate for 2 hours before serving, stirring once or twice. 3. Spoon tomato salad over torn iceberg lettuce to serve. |
