Sweet Simmered Pork Chops

We found this one on tv a while back, and everyone in my family likes it. A great quick, asian-inspired way to make pork.
Ingredients:
1/2 cup soy sauce (i use low sodium)
2/3 cup water
1/3 cup cooking sherry
2 tablespoons honey (thinned in water)
2 tablespoons rice wine vinegar or 2 tablespoons white wine vinegar
6 slices ginger (peeled)
3 -4 garlic cloves, crushed
4 center-cut pork chops
1/2 cup scallions or 1/3 cup chives, minced for garnish
Directions:
1. In pan, combine soy sauce, ginger, water, vinegar, honey, garlic, and sherry.
2. Bring to a boil.
3. Reduce to simmer and add pork chops.
4. Cook 10 minutes or until done.
