Sweet Ricotta And Oreo Parfait |

A yummy combination of a sweet ricotta mixture layered with oreos and fresh whipped cream! Easily adjusted to suit your taste! A layer of chocolate pudding can be added for an extra chocolate touch! Ingredients:
'12-15 crushed oreo cookies |
2 c. ricotta cheese |
1 1/4 c, plus 2 tbsp, confectioners sugar, separated |
1 tsp vanilla |
1 c. semi sweet chocolate chips |
1 pint heavy whipping cream |
Directions:
1. Crush Oreos and set aside
2. Add Ricotta, 1 1/4 c. confectioners sugar, vanilla, and choclate chips to mixer and combine well.
3. Remove mixture into bowl and place in fridge
4. Add pint of heavy cream to stand mixer
5. Mix on medium speed until soft peaks form, add 2 TBSP confectioners sugar, DON'T over mix!
6. Fold half of whipped cream into ricotta mixture
7. Take crushed oreos, ricotta mixture, and remaining whipped cream and layer into 4-6 individual parfait glasses
8. tip: add mixtures to large zip top bags, cut corner, and pipe into glasses
