Something a little different when you aren't in the mood for a tomato sauce. Can use to serve over pasta or rice. Ingredients:
3 cups red peppers (diced) |
1/2 cup onion (diced) |
2 garlic cloves (minced) |
1/2 cup white wine |
1 cup chicken broth |
1/2 teaspoon salt |
1 teaspoon paprika |
1/2 teaspoon black pepper |
1/4 teaspoon crushed hot chili pepper (or to taste) |
2 tablespoons olive oil |
Directions:
1. Heat oil in large sauce pan on med high heat. 2. Add onion, then garlic. 3. Stir about 1-2 minutes. 4. Add red pepper and stir around about 5 minutes. 5. Add wine, broth and spices. 6. Reduce heat and simmer about 20 minutes. 7. Pour out of pot to a blender/food processor. 8. Blend until smooth and return to pot. 9. Simmer 15 minutes. 10. Ready to serve. |
