I found this in a Gooseberry Patch cookbook. It is a hit with our friends when we get together. Ingredients:
2 red peppers |
1 c. sour cream |
2 3-oz. pkgs. cream cheese |
1/4 t. salt |
1/4 t. paprika |
1/8 t. cayenne pepper |
Directions:
1. Cut peppers in half lengthwise, remove stem and seed. 2. Place peppers, cut-side down, in an ungreased 8 x8 baking pan. 3. Cover and microwave on high for 8 to 10 minutes, or until tender. 4. Quickly submerge peppers in cold water and remove skins. 5. Combine peppers and remaining ingredients in a food processor or blender; process until smooth. 6. Refrigerate for 12 hours before serving.
