Sweet Red Pepper Basil Dip/Sauce |

This is a perfect summer dip with pita crisps or crudite's, and makes a fabulous sauce for grilled fish or poached asparagus. Ingredients:
1 (16 ounce) jar roasted red peppers packed in oil, drained well |
4 garlic cloves, peeled |
2 tablespoons fresh lime juice |
1/2 cup fresh basil leaf, torn loosely |
1/2 cup sour cream |
1/2 cup mayonnaise |
1 teaspoon smoked paprika |
1/2 teaspoon cayenne pepper |
Directions:
1. Puree' first four ingredients. Put into bowl, stir in sour cream and mayonnaise. Season to taste with paprika and cayenne. Chill overnight to let flavors bloom. |
