I'm not sure where I picked this recipe up but with only minimal ingredients it's a winner for me, one to try soon! Ingredients:
125 g cream cheese spread |
1/4 cup caster sugar |
1/2 cup dried apricot, chopped |
2 sheets sweet puff pastry, thawed |
oil (for frying) |
caster sugar, extra, to serve |
Directions:
1. Blend cream cheese & sugar together, fold in fruit. 2. Cut 3cm rounds out of each pastry sheet, using a scone or cookie cutter. 3. Place a small teaspoonful of the fruit mixture into the centre of 16 rounds. 4. Brush edges with a little water, top with second round & press edges to seal. 5. Heat oil & fry ravioli a few at atime, turning until crisp & golden. Drain on absorbent paper. 6. Toss in extra sugar & serve with hot custard if desired. |
