More unusual grains for breakfast. Ingredients:
1/6 cup quinoa |
1/3 cup water |
1 cup nonfat milk |
1 tablespoon flax |
1 tablespoon dried apricots |
1 teaspoon maple syrup |
1 cinnamon to taste |
1 teaspoon chopped almond |
Directions:
1. Bring the quinoa and water to a boil. Reduce heat to 2. simmer; cover and cook until all water is absorbed (10-15 minutes). 3. Combine 1/2 cup cooked quinoa with 1 cup nonfat milk in saucepan over medium-low heat. 4. Simmer until slightly thickened and add 1 tbsp ground flax. Add cinnamon and pure maple syrup to taste. Add 1 tbsp dried apricots or dried fruit of choice. Top with chopped almonds. |
