Sweet Potatoes With Sage and Cranberries |

From Publix Holiday Entertaining. Ingredients:
2 1/2-3 lbs sweet potatoes, peeled and cut into eighths |
1/2 cup onion, finely chopped |
1/4 cup butter |
1 tablespoon fresh sage, snipped |
1/2 teaspoon salt |
1/2 teaspoon ground black pepper |
1/2 cup dried cranberries |
1/4 cup half-and-half (i use soy or almond milk) |
Directions:
1. In a Dutch oven, place potatoes and enough salted water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20-25 minutes or until potatoes are tender. 2. Meanwhile, in a large skillet cook onion in hot butter over medium heat until tender. Add sage, salt, and pepper. Cook for 1 minute. Stir in cranberries. Remove from heat. 3. Drain potatoes. Return to Dutch oven. Add half-and-half (or other milk); mash with a potato masher or beath with an electric mixer until smooth. Stir in onion-sage mixture. |
