Sweet Potatoes With Peanut Crust |

A different twist on sweet potatoes. Nicely glazed with the crunch of peanuts. Ingredients:
2 medium sweet potatoes |
1/2c orange juice |
2tbs honey |
1tsp fresh minced ginger or a dash of ground ginger |
1/2tsp salt |
1/4tsp ground red pepper |
1/2c finely chopped salted peanuts |
1/4c fresh parsley or 1tbs dried parsley |
1tbs sesame seeds |
garnishes;orange rind strips,fresh parsley sprigs |
Directions:
1. Bake sweet potatoes at 400 for 30 mins. Let cool to touch,peel and slice into 1/2 thick slices 2. Combine orange juice and next 4 ingredients in a shallow dish;set aside 3. Combine peanuts,parsley and sesame seeds in shallow dish. Dip sweet potato slices into orange juice mixture and dredge lightly in peanut mixture. Place in single layer on lightly greased baking sheet. 4. Bake at 375 for 15 to 20 mins. Garnish,if desired. |
