Creamy sweet potato side dish with a nice crunchy topping. The Southern Comfort gives it a nice flavor! Almost like having a sweet potato pie without the crust. Ingredients:
29-ounce can cut sweet potatoes, drained |
3 tbsp butter melted |
1/2 cup sugar |
1 egg beaten |
2 tsp southern comfort (or almond extract can be subsituted) |
1 1/2 pumpkin pie spice |
praline topping |
5 tbsp butter, melted |
3/4 cup brown sugar |
2 tbsp flour |
2/3 cup pecans coarsely chopped |
Directions:
1. Preheat oven - 350 degrees 2. In large bowl-mash sweet potatoes 3. Stir in butter sugar,eggs, Southern Comfort, and pie spice 4. Place in greased casserole dish (9 inch glass pie plate works great) 5. TO MAKE TOPPING: 6. Mix topping ingredients together until it's crumbly...use your hands - it works better 7. Sprinkle topping mix evenly over sweet potatoes 8. Bake for 20 min. or until topping is carmalized and sweet potatoes are heated |
