Sweet Potatoes in Orange Syrup |

Ingredients:
2 1/4 pounds sweet potatoes, peeled and cut into 1/4-inch-thick slices |
butter-flavored vegetable cooking spray |
1/4 cup reduced-calorie maple syrup |
1 tablespoon frozen orange juice concentrate, undiluted |
2 tablespoons coarsely chopped pecans, toasted |
Directions:
1. Place potato, overlapping slightly, on a jellyroll pan coated with cooking spray. Coat potato with cooking spray. Bake, uncovered, at 375° for 30 minutes or until tender, turning once. Transfer to a bowl. 2. Combine syrup, juice concentrate, and pecans in a glass measure. Microwave at HIGH 30 seconds; drizzle over potato slices. |
