My daughter made this for our Thanksgiving dinner this year - I believe she said she got the original recipe online. It was so good, it was more like dessert than a veggie side dish! The coconut, marshmallows and pecans add such a great flavor (and crunch) - this will be on our holiday table every year! Read more ! Ingredients:
3 large sweet potatoes, baked |
1 1/2 cups white sugar |
3 eggs, beaten |
1/2 cup butter, melted |
1 cup evaporated milk |
1 teaspoon ground cinnamon |
2 cups miniature marshmallows |
1 cup flaked coconut |

1/2 cup packed brown sugar |
1 cup chopped pecans |
1/2 cup butter, melted |
Directions:
1. Genereously butter a 9x13 inch baking dish or casserole. 2. Bake the sweet potatoes until soft. Peel and mash (this may be done ahead and kept in the refrigerator until you're ready to prepare the casserole). 3. Mix mashed potatoes together with sugar, eggs, butter, evaporated milk, cinnamon, marshmallows and coconut; place the mixture into the baking dish. 4. In a small bowl, mix together brown sugar, pecans and butter; spread the topping over the casserole. 5. Bake 30-35 minutes at 400 degrees. |
