Sweet Potatoes and Broccoli For One |

I have this with a roasted chicken breat when my husband is working. Its fast and easy. Ingredients:
1 medium sweet potato |
1/2 cup water |
1 cup fresh broccoli, chopped |
1/2 cup low fat cottage cheese |
1 tablespoon sesame seeds |
Directions:
1. Dice the sweet potato and cook in the 1/2 c water covered until almost done. 2. Add the broccoli and cook until tender. 3. You may need to add more water. 4. Add to hot vegetables the cottage cheese and sesame seeds and toss until blended. |
