Sometimes I don't want overly sweet . So try this with lime, coconut oil and blue cheese. It's really a nice but different combination and would make a great accompaniment to meat, fish or poultry Ingredients:
6 medium sweet potatoes cooked |
2 tbs coconut oil ( or use butter if desired but i like the coconut flavor ) |
juice from 1 large fresh lime |
1/2 cup gorgonzola cheese crumbles |
salt and pepper to taste |
Directions:
1. Cook potatoes in their skins 2. When cool enough to handle, slip off skins 3. Mash or use an electric mixer, to combine potatoes with all the remaining ingredients 4. Season with salt and pepper to taste 5. Place in casserole dish 6. Reheat in micro or oven |
