These are the sweet potatoes my Grandfather used to make, but he liked to put coconut on top. I don't care for coconut, so I leave that part off. Ingredients:
2-3 lbs sweet potatoes |
1/3 cup butter |
1/2 cup water |
1/3 cup light karo |
1 1/2 cups brown sugar (packed) |
1/4 tsp cinnamon |
Directions:
1. Preheat oven to 350 2. Cut sweet potatoes into wedges and boil until just tender. 3. Combine rest of ingredients in sauce pan and bring to a boil for then simmer for 15 minutes 4. Drain potatoes and place in a fairly shallow casserole. 5. Pour syrup over potatoes 6. Bake for 30 to 40 minutes |
