Once done... Can bake in lightly buttered pan for 10 minutes on 350 Ingredients:
540 g sweet potatoes (3 large) |
1 1/2 tsp vanilla extract |
1/8 tsp ground cinnamon |
1/8 tsp ground nutmeg |
1 tbsp margarine |
Directions:
1. Wash and dry sweet potatoes and pierce all sides with a fork. Microwave on high for approximately 15 minutes or until soft (or roast potatoes in oven at 400 degrees for 40-50 minutes). 2. Cut potatoes in half lengthwise and scoop the meat out into a medium mixing bowl. Discard skins. 3. With electric beater whip potato pulp with remaining ingredients. |
