This zesty mayo dip would also go well with sliced red bell peppers and celery sticks before dinner; it's amazing how many vegetables kids will eat when they're actually hungry. Ingredients:
3 sweet potatoes (about 1 1/2 pounds), peeled, each cut lengthwise into 8 wedges |
2 tablespoons vegetable oil |
kosher salt, freshly ground pepper |
1/3 cup mayonnaise |
1/4 teaspoon finely grated lime zest |
2 teaspoons fresh lime juice |
chopped fresh cilantro (for serving) |
Directions:
1. Preheat oven to 450°F. Toss sweet potatoes and oil on a foil-lined large rimmed baking sheet; season with salt and pepper. 2. Roast, turning once, until golden brown and crisp, 25-30 minutes. 3. Meanwhile, whisk mayonnaise, lime zest, and juice in a small bowl. 4. Season fries with salt, top with cilantro, and serve with lime mayo for dipping. |
