This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kilgore Estate in Sachse, Texas in 1988. Ingredients:
2 cups cooed sweet potatoes |
1 cup milk |
2 egg whites |
2 teaspoons canola oil |
1 cup whole wheat flour |
2 teaspoons baking powder |
Directions:
1. Place sweet potatoes, milk, egg whites and oil in bowl of a food processor. 2. Process until blended then add flour and baking powder and process until smooth. 3. Preheat waffle iron according to manufacturer's directions. 4. Coat grids with nonstick cooking spray. 5. Add 3/4 cup of the batter and bake for 8 minutes. 6. Repeat until all batter is used. |
