This stuffing doesn't need any description beyond the name. But it's especially good for duck, if you happen to have some. Recipe makes 4 cups of stuffing. This recipe also uses hot stuffing in the bird, meaning that it helps shorten the cook time of the bird you are preparing. Ingredients:
2 tbsp butter |
1/2 c diced onion |
2 c boiled, peeled, mashed sweet potatoes (abt 1.5 pounds) |
2 c dry bread crumbs |
1 1/2 tbsp dried sage leaves |
1 tbsp fresh parsley |
zest of 1 orange (or lemon) |
nutmeg |
salt & pepper |
Directions:
1. Put the butter and onions in a skillet that will hold all ingredients, and sautee the onions until clear. 2. Mix the potatoes and breadcrumbs in a large mixing bowl. 3. Add the sage, parsley, and zest to the mix. 4. Season with nutmeg, salt and pepper. 5. Turn the potato mix into the skillet, and turn the heat on to medium. 6. Heat the mix until very hot but not scorched. 7. Remove from heat and immediately stuff duck or chicken. |
