Sweet Potato Sticks With Herbed Orange Dip |

This unusual appetizer has the best flavor! Sweet potatoes are a powerhouse of vitamins and fiber, and these are good even when cold. Ingredients:
4 sweet potatoes, peeled or unpeeled (your preference; i prefer unpeeled) |
2 tbsp melted butter |
3 tbsp lime juice |
1 tsp salt |
3 tbsp sugar |
1 1/2 tsp cinnamon |
1 tsp ginger |
1/4 tsp nutmeg |
1 recipe fresh orange dip (included) |
for the dip |
1 3-oz pkg non-fat cream cheese |
1 cup low-fat sour cream |
1/3 cup frozen orange juice concentrate, thawed |
1/4 cup honey |
pinch of salt |
2 tsp grated orange zest |
1 tbsp minced gingerroot |
2 tbsp chopped mint |
1 tbsp chopped thyme |
Directions:
1. Preheat oven to 400 *F 2. Cut sweet potatoes into strips, about 1/3” thick by 2 to 3 inches long 3. Place sticks on cookie sheet 4. In small bowl combine butter, lime juice, and salt. Mix well. 5. In another small bowl, combine sugar, cinnamon, ginger, and nutmeg. 6. Sprinkle over the sticks and toss to coat evenly. 7. Bake for 20 – 25 minutes. 8. Stir twice during baking time, and bake until sticks are golden brown. 9. Drain sticks on paper towels, and let cool 10 minutes before serving. 10. For the Dip: 11. In small bowl, beat the cream cheese until fluffy 12. Gradually add sour cream. 13. Beat until smooth. 14. Beat in remaining ingredients 15. Cover and refrigerate 2 to 3 hours to blend flavors. |
