These canapés are delicious! Ingredients:
2 large sweet potatoes, peeled & cut into 8 chunky pieces |
1 tablespoon olive oil |
2 tablespoons mayonnaise (the real thing) |
good squeeze lemon juice |
8 slices prosciutto, halved |
3 watercress, springs to serve |
Directions:
1. Preheat oven 360ºF then toss the potato chunks with the oil and some salt & pepper on a baking sheet. 2. Roast for 20-30 minutes until golden and crisp on the outside, then leave to cool. 3. To serve, mix the mayonnaise with the lemon juice. 4. Put a scrunched up piece of ham on each potato, then top with some lemony mayo. 5. Arrange on a platter with the watercress, then serve. |
