Ingredients:
1 cup rolled oats
1 cup whole wheat flour
1 large sweet potato
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1 tsp ginger
1 tsp vanilla extract
1/4 cup prune puree
3/4 cup splenda no calorie sweetener
3/4 cup skim milk
1 large egg
Directions:
1. Preheat oven to 400 degrees. Grease muffin tin (large muffins)
2. Cook sweet potato. Peel and mash - set aside
3. In large mixing bowl, combine all the dry ingredients except the Splenda.
4. In a small mixing bowl combine the sweet potato and remaining ingredients, including the Splenda.
5. Gently mix the wet ingredients into the dry ingredients. Batter will be thick. Spoon into muffin tins. Bake at 400 for 25 minutes.
