Sweet Potato Spice Cake

This is a recipe from The Victory Garden Cookbook by Marion Morash. I had extra sweet potatoes and found this recipe and it's been one that always gets smiles and second serving requests when I make it.
Ingredients:
1 cup all-purpose flour
1 tsp. baking soda
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
4 tbsp unsalted butter
1 cup sugar
1 large egg
1 large or 2 medium apples
1/2 pound sweet potato
1 tsp vanilla extract
1/2 cup chopped nuts (i use walnuts or pecans)
Directions:
1. Grease and flour an 8 square pan.
2. Preheat oven to 350 degrees.
3. Sift together the flour, baking soda, salt, and spices and set this aside.
4. Cream the butter and sugar until light.
5. Beat in the egg.
6. Peel and grate the sweet potatoes and apples and then stir them into the creamed butter mix and also add the vanilla extract with them.
7. Turn the batter into the prepared pan and bake for 35 minutes. Test and if not done yet bake an addtional five minutes.
8. Cool before serving.
9. Add the dry, sifted ingredients and stir until just incorporated and then mix in the nuts.
