Sweet Potato Soup With Apples And Cloves |

This smooth, creamy, flavourful, orangy coloured soup recipe was taken from Ricardo Larrivee's exceptional cookbook. Ingredients:
1 leek, white part only, chopped |
3 tbsps butter |
1 apple, peeled and cored and cut into pieces |
3 medium sweet potatoes, peeled and cut into pieces |
1/4 cup white wine or chicken stock |
5 cups chicken stock |
1/8 tsp ground clove |
salt and pepper to taste |
apple slices, for garnish |
Directions:
1. In a medium saucepan, soften leek in butter. 2. Add apples and sweet potatoes. 3. Deglaze with white wine or stock. 4. Add 5 cups of stock and clove. Cover and simmer until sweet potatoes are cooked about 20 minutes. 5. Process in the food processor or blender (careful as the mixture is very hot!). Season with salt and pepper. 6. Ladle into bowls and garnish with slices of apple. |
