My own creation...a sweet potato casserole without marshmallow topping, but just as sweet and tasty. Great for the holidays. Ingredients:
3 cups sweet potatoes (baked, peeled and mashed) |
1 cup sugar |
1/2 teaspoon salt |
2 eggs, beaten |
1/4 cup margarine |
1/2 cup sweetened condensed milk |
1/2 teaspoon vanilla |
1/4 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1 teaspoon butter flavoring |
1 teaspoon sherry flavoring |
1/3 cup margarine, melted |
1 cup light brown sugar |
1 cup pecans, chopped |
1/2 cup flour |
Directions:
1. Place mashed potatoes in a bowl. Beat eggs and add to potatoes. Add the sugar, salt, 1/3 stick margarine, sweetened condensed milk, vanilla, cinnamon, nutmeg, butter & sherry flavorings and beat on low speed until well blended and combined. Pour into buttered baking dish. 2. For topping:. 3. Mix remaining ingredients together except margarine. Pour the topping over potatoes, then pour the melted margarine over the topping. Bake 40 minutes in preheated 350 degree oven. |
