Ingredients:
5 whole(s) sweet potatoes, baked, peeled & mashed |
6 whole(s) eggs, well beaten |
1/2 cup(s) milk |
1 1/2 stick(s) butter |
3/4 cup(s) sugar |
1 teaspoon(s) vanilla |
pinch salt |
pinch cinnamon & nutmeg |
Directions:
1. Beat peeled & baked potatoes with electric mixer until fluffy. 2. Add all other ingredients and whip until well blended and smooth. 3. Grease souffle dish or casserole (8 cup). 4. Pour in mixture and dot with butter 5. Bake at 350 for 45 minutes- 1 hour. 6. Place foil on oven bottom to catch drips. 7. Can be made day before, covered in the fridge overnight. 8. Bring to room temperature before baking. |
