I was introduced to this casserole 4 years ago, by my son's girlfriend at Thanksgiving. It quickly became a favorite of my late husband, who insisted I make it again the year after. My first attempt was a bit scary, because the marshmallow will flame up quickly if you're not watching them. Read more . It only takes seconds until you brown them. A small kitchen torch would probably do a better job than the broiler.
Ingredients:

* 3 cups mashed sweet potatoes
* 2 tablespoons butter
* 1/4 cup orange juice or milk (we use small bottle of simply orange)
* 1/2 teaspoon salt
* 1/3 cup marshmallow creme
* 1 egg, well beaten
* 1/2 to 1 cup mini marshmallows

2. Combine sweet potatoes, butter, orange juice or milk, salt, and 1/3 cup of marshmallow creme. Beat in egg. Pile sweet potatoes in a lightly buttered baking dish (9 round or square glass works best if available). Bake at 400 for 25 minutes. Top with mini marshmallows and brown under broiler til golden (keep oven door cracked open and watch carefully to prevent fire!!)
