This always seems to be a hit during the holidays. If you don't have the time to bake your sweet potatoes, cube and boil them until tender. Ingredients:
3 cups cooked mashed sweet potatoes (bake 350 1 hour) |
1 cup sugar |
2 eggs |
1/2 cup milk |
1/2 teaspoon vanilla |
1 cup brown sugar |
1/2 cup flour |
1 cup chopped pecans |
1/4 cup butter, diced |
Directions:
1. Preheat oven to 400. 2. Combine potatoes, sugar, eggs, milk, salt and vanilla. 3. Mix well and pour into a buttered 1 1/2 quart dish. 4. Combine brown sugar, flour pecans and butter. 5. Spread over sweet potatoes. 6. Bake at for 30 to 40 minutes or until browned. |
