I am always looking for new ways to prepare sweet potatoes; these are unusual and really good! I wonder if pumpkin would work as well… Ingredients:

                                                1 cup flour |
                                                1/4 cup corn bran |
1 teaspoon cream of tartar |
                                                1/2 teaspoon baking soda |
                                                1/8 teaspoon cinnamon |
                                                1/8 teaspoon nutmeg |
3/4 cup shredded sweet potato |
1/4 cup raisins (i like the golden ones) |
                                                1/3 cup buttermilk |
                                                1 1/2 tablespoons oil |

                    Directions:

                                1. Mix together dry ingredients. 2. Add the sweet potatoes and raisins. 3. Add the buttermilk and oil. 4. With floured hands knead the mixture for about 2 minutes. 5. On a lightly floured surface, roll out the dough to 1/4 inch thickness. 6. Cut into 2 1/2 inch rounds. 7. Transfer to a lightly greased cookie sheet. 8. Bake at 475 for 6-8 minutes. Serve warm. |
