If you like sweet potatoes this is a great way to eat them. This is a herby, sweet and creamy salad sure to please all. I love it and hope you do too. Ingredients:
3 pound sweet potatoes peeled and cut into 1/2 inch cubes |
4 stalks celery sliced |
1 cup walnut halves |
1 cup raisins |
20 ounce can crushed pineapple well drained |
dressing |
2/3 cup mayonnaise |
1-1/2 cup sour cream |
grated rind of 1 orange |
2 tablespoons chopped crystallized ginger |
Directions:
1. Cook potatoes in boiling salted water for 15 minutes then drain and cool. 2. Stir together the dressing ingredients. 3. When potatoes are cool mix lightly with the celery, walnuts, raisins and pineapple. 4. Add the dressing gradually and toss carefully so as not to mash the potatoes. |
