An alternative to regular potato salad, inspired by a Bobby Flay recipe. Ingredients:
3 red onions, peeled, halved and thinly sliced |
1 tablespoon dijon mustard |
1/4 cup balsamic vinegar |
1 teaspoon honey |
1 tablespoon fresh thyme, finely chopped |
3 sweet potatoes, sliced into 1/2-thick slices |
salt & freshly ground black pepper |
Directions:
1. Spray a pan with cooking spray and turn stove to medium heat. 2. Cook onions slowly until golden brown. 3. Add mustard and vinegar and cook another 2 minutes. 4. Remove from heat and add honey and thyme. 5. Stir to combine and let cool. 6. Preheat grill. 7. Spray the potato slices with cooking spray on both sides and season with salt and pepper. 8. Grill the potatoes on each side for 3 to 4 minutes or until just cooked through. 9. Place potatoes in a bowl and fold in onion mixture. |
