A delicious change from regular potato salad. Sweet potatoes are tossed with raisins and walnuts in a sweet creamy dressing. An excellent fall side dish. Ingredients:
2 pounds sweet potatoes, peeled and cubed |
1 cup mayonnaise |
1/2 cup packed brown sugar |
1 cup chopped walnuts |
1/2 cup raisins |
Directions:
1. Place potatoes into a large saucepan, and fill with enough water to cover. Bring to a boil, and cook for about 8 minutes, or until tender. Drain, and cool slightly. 2. In a large bowl, stir together the mayonnaise and brown sugar. Stir in the sweet potatoes, walnuts and raisins until evenly coated. Chill for at least 1 hour before serving. |
