Who doesn't LOVE potato salad....... Exactly!!! I've been making this Yummy recipe for a few years now, and it's always a crowd pleaser. Enjoy! Ingredients:
2 1/2 lbs potatoes |
3 tablespoons rice wine vinegar |
3 celery, chopped |
1/2 cup finely chopped red onion |
4 -5 tablespoons sweet pickle relish |
4 hard-cooked large eggs, chopped |
1 cup mayonnaise |
2 tablespoons prepared mustard |
salt |
black pepper |
2 tablespoons celery seeds |
2 tablespoons sugar |
Directions:
1. Place potatoes in a large pot, cover with salted water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender. Drain. Let cool. Cut potatoes into 1/2-inch cubes. Place potatoes in a large bowl. 2. In a med bowl combined remaining ingredients. Toss gently. 3. Spoon mayonnaise mixture over potato, toss gently to coat. Cover and chill 1 to 24 hours. |
